Sriracha Deviled Eggs


This is my recipe for Sriracha deviled eggs.  I make this for every Court of Honor and they disappear quickly.  Using Sriracha cuts down on the amount of mayo you need, so I suppose that this is somewhat healthier.  It is definitely tastier.  This is also a very inexpensive dish to make for pot luck type affairs.

Ingredients
1 dozen eggs
pinch of salt
1/8 tsp mustard powder
3 Tbsp mayo
4 Tbsp Sriracha sauce
paprika (to sprinkle)

Equipment
pot with lid
knife
cutting board
fork
whisk
rubber spatula
paper towel
1 gallon resealable freezer bag
3 cup measuring cup or similar sized bowl
scissors
deviled egg plate (optional)

If you're an old hand at deviled eggs, you probably don't need to read any further.  But if you are new to this, we'll go through it step by step.

 Put your eggs in a pot and add enough water to cover them plus a pinch of salt.

 When they come to a boil, turn off the heat and put on the lid.  Let sit for 15 minutes.

 Put the pot in the sink and run cold water on the eggs to stop the cooking process.

Once they are cool, pour out the water.  Shake the pot to crack the egg shells.

 Peel the eggs.  I like to peel them under running water.

Here's the mess.

 Cut each egg in half lengthwise.  Pop out the yolks into a bowl.  Use a wet paper towel to wipe off the knife after each cut.  This makes everything go smoothly.

 Use a fork to crumble the yolks.  Try not to leave any big lumps.

 Add the mustard powder, mayo, and Sriracha.

 Use a whisk to mix it up and get out the lumps.  Add more Sriracha to get the desired consistency.

 I like to put the freezer bag into a 3 cup measuring cup and flip the edges over.  Use whatever bowl you have that works.  Use the spatula to transfer the mixture to the bag.

 Cut one corner off the bag, fold over the top, and use it like a cake icing bag to fill your eggs.

Sprinkle paprika on your eggs if desired and enjoy.

The deviled egg container that I use is made by RubberMaid and comes with a lid.  I ordered it on Amazon and I'm very happy with it.  It holds 20 deviled eggs, which means there are 4 left over for our family to taste before the Court of Honor.
